ABSTRACT A method of reducing or eliminating the mutagenicity of coffee by causing catalase, peroxidase or a combination of catalase and peroxidase to act on a coffee beverage or an in-process material at any stage of the manufacture of coffee beverage, such as roasted coffee beans, roasted and milled coffee beans, coffee extract, concentrate of the coffee extract or soluble coffee powder. Also disclosed is a pharmaceutical composition for inactivating the mutagenicity of coffee, which comprises catalase or peroxidase together with a pharmaceutically acceptable carrier thereof.
