ABSTRACT In order to prepare a clam tongue for consumption, the clam is extracted from its shell and the viscera removed. The tongue then is separated from any remaining flesh and butterfly cut. The tongue then is passed through a mechanical meat tenderizer to provide a tender, edible one-piece clam cutlet.
