ABSTRACT A method and an apparatus for freezing food wherein the food is wrapped in a film which is non- permeable to water and the wrapped food is immersed in flowing brine of sequentially different temperature. A brine tank is provided to contain the brine and a conveyor transferred the wrapped food through the tank. A plurality of brine-injecting nozzles are disposed along the food passage defined by the conveyor so as to inject the brine of different temperatures against the food passage.
