ABSTRACT OF THE DISCLOSURE The invention relates to a biologically pure culture of extremely thermophilic bacterium THERMUS AQUATICUS (Variety T-351). The bacterium produces an enzyme CALDOLYSIN which exhibits pro- teolytic activity, particularly at temperatures of 65°C to 85°C and which is stable at temperatures up to 75°C at a pH range of 4 to 12. The bacterium was isolated from a hot pool in New Zealand which was at 79° ? 4°C, low in sulphide and at pH 7.5 to 7.8. The cells were gram negative, non-motile, non-sporulating rods. The bacterium exhibits optimal activity at 70-80°C.
