ABSTRACT OF THE DISCLOSURE An apparatus for producing vegetables pickled in a bran paste, which is disclosed herein, comprises a rotational control uint, a rotary drive connected to the rotational control unit and adapted to be freely controlled in rotation, a rotary member connected with the rotary drive and adapted to be rotated by the rotary drive, and a vessel containing a bran paste bed therein and rotatably held on the rotary member. The apparatus may further include a temperature adjuster for adjusting the envelomental temperture of the vessel at any place of the vessel.
