ABSTRACT The reaction mixtures which result from the enzymatic reaction of fumaric acid to produce L-malic acid contain L-malic acid and unreacted, fumaric acid as salts. For the production of pure solutions of L- malic acid, the reaction mixtures are treated with cation exchangers at from 50 to 150°C, and the eluates are filtered after being concentrated to an L-malic acid content of from 30 to 80% by weight. The pure L-malic acid is obtained by evaporating the solutions, optionally after a treatment with active carbon.
