METHOD OF DIFFUSING ESSENTIAL OILS AND OLEO-RESINS OF SPICES IN A CARRIER SOLUTION. ABSTRACT OF THE DISCLOSURE. This method of diffusing essential oils and oleo-resins of spices in a carrier solution is applicable notably for pre- paring seasonings in the pork product industry. The essent- ial oils are obtained by distilling the spices, and the oleo-resins are the evaporation residues of the dissolution of spices in a solvent. According to the desired concen- tration of the diffusion contemplated, the essential oils and the oleo-resins are reduced by the action of a high pressure followed by a sudden expansion. The presence of an emulsifier in the mixture prevents the microparticles from reforming a mass. The homogeneity of the mixture is obtained by forming an emulsion by stirring. The invention is applic- able more particularly to the food industry in general.
