Described are variants of Bacillus stearodhermophilus alpha-amy-lases with mutations at positions 181 or/ and 182 having altered starch hydrolysis profiles. The variants have improved thermostability and increased specific activity, resulting in reduced peak vis-cosity and altered final viscosity during starch liquefaction. The amylase vari-ants are useful, e.g., in liquefaction and other starch degradation processes.
Linvention concerne des variantes dalpha (a)-amylases ayant des profils dhydrolyse de lamidon modifiés. Les variantes ont une stabilité thermique améliorée et une activité spécifique accrue, ce qui résulte en une viscosité crête réduite et une viscosité finale modifiée pendant la liquéfaction de lamidon.
