A process for producing fried starch-containing foodstuffs is described, comprising a thermal treatment resulting in gelatinisation of starch, partial frying, cooling, optional freezing and optional finishing, wherein the foodstuff is subjected to a mechanical surface treatment between said thermal treatment and said partial frying. The mechanical treatment may consist of sanding, brushing, combined heat and pressure drop and other treatments. The foodstuff obtained has improved crispness, even after a holding time after finish frying.

L'invention porte sur un procédé de production de denrées alimentaires frites contenant de l'amidon. Ce procédé consiste à faire subir un traitement thermique aboutissant à la gélification de l'amidon, à faire frire en partie, à refroidir et, éventuellement, à congeler la denrée alimentaire ainsi qu'à effectuer des opérations facultatives de finissage. Dans le cadre de ce procédé, la denrée alimentaire est également soumise à un traitement mécanique de surface prenant place entre le traitement thermique et les opérations de friture partielle. Ce traitement mécanique peut consister en un traitement abrasif, en un brossage ainsi qu'en une combinaison de chutes de chaleur et de pression et en d'autres traitements. La denrée alimentaire ainsi obtenue a un "craquant" renforcé même après un certain temps de garde, une fois frite.
