The present invention is intended to prepare lowly salted fish meat or fish eggs products with good firmness and preferable flavor. By treating fish meat or fish eggs with an aqueous salt solution containing a given amount of glycine or sodium L-aspartate, or by directly sprinkling a given amount of glycine or sodium L-aspartate over fish meat or fish eggs preliminarily treated with a salt solution, products of fish meat or fish eggs are produced, characterized in that the products have greater firmness and and better flavor. A method for producing products of fish meat or fish eggs, comprising treating fish meat or fish eggs by using an aqueous salt solution containing glycine or sodium L-aspartate, or by directly sprinkling glycine or sodium L-aspartate over fish meat or fish eggs which are pretreated with a salt solution.
