The invention relates to a novel method for preparing a sliced food product comprising a low amount of acrylamide. The food product is preferably of plant origin, such as a tuber or a vegetable, preferably the food product is potato- based. The invention also relates to the use of a short heat treatment to accelerate low temperature extraction of asparagine from an asparagine- containing sliced food intermediate.

La présente invention concerne un procédé inédit de préparation d'un produit alimentaire en tranches à faible teneur en acrylamide. Le produit alimentaire est, de préférence, d'origine végétale. Il peut s'agir, par exemple, d'un tubercule ou d'un légume, et le produit alimentaire est, de préférence, à base de pomme de terre. L'invention concerne également l'utilisation d'un bref traitement thermique pour accélérer l'extraction à basse température de l'asparagine d'un produit alimentaire intermédiaire en tranches contenant de l'asparagine.
