The present invention relates to a gene encoding a catalase and use thereof, in particular, a brewery yeast having high sulfite-producing capability, alcoholic beverages produced with said yeast, and a method for producing said beverages. More particularly, the present invention relates to a yeast, whose capability of producing sulfite, that contribute to stability of flavor in products, is enhanced by amplifying expression level of CTT1 gene encoding a catalase Ctt1p, especially non-ScCTT1 gene or ScCTT1 gene specific to a lager brewing yeast, and to a method for producing alcoholic beverages with said yeast.
La présente invention concerne un gène codant pour une catalase et son utilisation, notamment, une levure de bière possédant une capacité élevée de production de sulfite, des boissons alcoolisées fabriquées à base de cette levure et un procédé de fabrication de ces boissons. L'invention concerne plus particulièrement une levure dont la capacité de production de sulfite (qui contribue à la stabilité de l'arôme de produits) se trouve améliorée par l'amplification du taux d'expression du gène CTT1 codant pour une catalase Ctt1p, et notamment un gène ScCTT1 ou non-CTT1 spécifique à une levure de bière basse ainsi qu'un procédé pour fabriquer des boissons alcoolisées au moyen de cette levure.
