Fully hardened, but otherwise not chemically treated fat material usable as a hardstock having the following fatty acid composition: C12 9-45 wt.%, C14 1-5 %, C16 3-7 %, C18 40 %, others up to 10 %; these fatty acids being arranged in the following triglyceride combinations: H3 0-35 wt.%, HHM 20-80 %, MHM 10-60 %, M3 0-10 %, H representing saturated fatty acids having more than 15 carbon atoms and M saturated acids having 12 or 14 carbon atoms, the sequence of the symbols H and M representing the position of the fatty acids in the triglyceride molecule. A process for producing such fat material and spreads and shortening comprising such fat materials.
Matière grasse totalement durcie autrement que par traitement chimique, utilisable en tant que matière grasse solide possédant la composition suivante en acides gras: C¿12? 9 à 45 % en poids, C¿14? 1 à 5 % en poids, C¿16? 3 à 7 % en poids, C¿18? > 40 %, les autres acides gras allant jusqu'à 10 % en poids. Ces acides gras sont placés dans les combinaisons suivantes de triglycérides: H¿3? 0 à 35 % en poids, HHM 20 à 80 % en poids, MHM 10 à 60 % en poids, M¿3? 0 à 10 % en poids, H représentant des acides gras saturés possédant plus de 15 atomes de carbone et M des acides saturés possédant 12 à 14 atomes de carbone, la séquence des symboles H et M représentant la position des acides gras dans la molécule de triglycéride. L'invention concerne également un procédé de production d'une telle matière grasse, des pâtes à tartiner ainsi que des graisses du type shortening comprenant une telle matière grasse.
