The invention relates to a portion bag in which a portion of pre-deep-fried fries is packed and from which ready-to-heat fries can be obtained by means of post-baking without re-frying. The aim of the invention is to considerably reduce costs and preparation time. To this end, the fries have a fat content of 5-8 wt. % and a water content of 30-50 wt. %. The portion-bag preferably has a durability after the production that allows the bag to be stored at a typical ambient refrigerator temperature of 2-7 ~C, especially at 4 ~C, for a period of at least 40-60 days, or at room temperature, especially at 15-25 ~C, for a period of at least 15-20 days without significantly compromising the quality of the fries obtained after baking.

L'invention concerne un sachet-portion contenant une portion de frites préfrites qui donnent, après une cuisson ultérieure et sans nouvelle friture, des frites prêtes à consommer. Pour obtenir une meilleure rentabilité et un temps de préparation plus rapide, les frites ont une teneur en graisse de 5 à 18 % en poids et une teneur en eau de 30 à 50 % en poids. Le sachet-portion présente, de préférence après sa production, une durabilité qui permet de le stocker pendant une période d'au moins 40 à 60 jours à une température ambiante de réfrigérateur typique comprise entre 2 et 7 ·C, de préférence, à une température de 4 ·C ou pendant une période d'au moins 15 à 20 jours à température ambiante, de préférence, à une température de 15 à 25 ·C, sans pour autant devoir faire avec une baisse notable de la qualité des frites obtenues après cuisson.
