A low or no fat food coating or enrobing composition is composed of water, soluble solids, at least one crosslinkable hydrocolloid, and a sufficient amount of a crosslinking agent to crosslink the hydrocolloid. This enrobing composition is used to enrobe a foodstuff such as snack cakes, cookies, donuts, fruits, and confectioneries.
