Disclosed is a method for producing a dry yeast containing S-adenosyl-L-methionine by using an yeast capable of producing S-adenosyl-L-methionine. The method is characterized by adding a cyclodextrin to an yeast cell condensation product produced from a cell culture of the yeast and drying the resulting product. Also disclosed is an SAMe-containing dry yeast produced by the method. Further disclosed is a composition produced by using the dry yeast. It becomes possible to produce a dry yeast containing S-adenosyl-L-methionine (which is useful as a water-soluble physiologically active substance) at a high concentration and having excellent storage stability and a composition produced by using the dry yeast in a simple manner and at low cost and introduce the dry yeast and the composition on the market.

Cette invention a pour objet un procédé de production de levure sèche contenant de la S-adénosyl-L-méthionine, ce procédé utilisant une levure capable de produire de la S-adénosyl-L-méthionine. Le procédé est caractérisé par l'addition d'une cyclodextrine à un produit de condensation de cellules de levure produit à partir d'une culture cellulaire de la levure et le séchage du produit résultant. Cette invention concerne également une levure sèche contenant de la SAMe produite par le procédé. Cette invention concerne en outre une composition produite à l'aide de la levure sèche. Il est possible de produire une levure sèche contenant de la S-adénosyl-L-méthionine (qui est utile en tant que substance hydrosoluble active sur le plan physiologique) à une concentration élevée et présentant une excellente stabilité au stockage et une composition produite à l'aide de la levure sèche d'une manière simple et à bas coût et d'introduire la levure sèche et la composition sur le marché.
