Uncrystallisable or slowly crystallisable viscous liquid xylitol compositions containing 51-80 % xylitol, 0.1-44 % D-arabitol, and 5-48.9 % oligomers or polymers incapable of reducing glucose, these percentages being determined on the basis of the dry compositions. A method for preparing said compositions is also provided. The compositions may be used in cosmetics, pharmaceuticals and confectionery.

L'invention concerne des compositions liquides visqueuses de xylitol incristallisables ou à cristallisation retardée caractérisée par le fait qu'elles contiennent: de 51 % à 80 % de xylitol, de 0,1 % à 44 % de D- arabitol, de 5 % à 48,9 % d'oligomères ou de polymères non réducteurs du glucose, ces pourcentages étant exprimés sur la base sèche des compositions. Elle concerne aussi un procédé d'obtention de ces compositions. Ces compositions sont utilisables dans l'industrie de la cosmétique, la pharmacie et la confiserie.
