The invention relates to novel caramels with a high prebiotic oligosaccharide content. The invention comprises the transformation of food-grade sugars containing D-fructose into caramels rich in oligosaccharides with prebiotic activity, either using solid acid catalysts, such as zeolites, clays or ion-exchange resins in the acid form in a heterogeneous medium or using high-molecular-weight soluble polymeric acid catalysts in a homogeneous medium, whereby the catalyst can be recycled. The invention is compatible with both discontinuous and continuous production processes. The resulting caramel exhibits prebiotic properties, promoting the development of a beneficial intestinal flora, and a reparative effect on the damaged colon.
La présente invention concerne la transformation de sucres alimentaires contenant du D-fructose en caramels enrichis en oligosaccharides qui présentent une activité prébiotique à l'aide de catalyseurs acides solides, de type zéolithes, argiles ou résines échangeuses d'ions dans leur forme acide, en milieu hétérogène; ou à l'aide de catalyseurs acides polymères solubles de poids moléculaire élevé, en milieu homogène, avec la possibilité de recycler le catalyseur. Le procédé de l'invention est compatible avec d'autres procédés de production discontinus ou continus. Le caramel obtenu présente des propriétés prébiotiques, favorise le développement d'une flore intestinale bénéfique, et a un effet réparateur sur le côlon endommagé.
