The present invention relates to a gene encoding a protein responsible for flocculation property of yeast and use thereof, in particular, a brewery yeast with appropriate flocculation property for producing desired alcoholic beverages, alcoholic beverages produced with said yeast, and a method for producing said beverages. More particularly, the present invention relates to a yeast to which suitable flocculation property for brewing desired alcoholic beverages was imparted by controlling expression level of MHP1 gene encoding a protein responsible for flocculation property of brewery yeast, especially non- ScMHP1 gene specific to a lager brewing yeast, to alcoholic beverages produced with said yeast and to a method for producing said beverages.
La présente invention concerne un gène codant pour une protéine responsable de la propriété de floculation de la levure et l'utilisation dudit gène, en particulier une levure de bière à propriété de floculation appropriée servant à produire des boissons alcoolisées souhaitées, des boissons alcoolisées produites à l'aide de cette levure et un procédé de production desdites boissons. Cette invention concerne plus particulièrement une levure à laquelle une propriété de floculation adaptée au brassage de boissons alcoolisées souhaitées a été conférée par régulation du niveau d'expression du gène MHP1 codant pour une protéine responsable de la propriété de floculation de la levure de bière, notamment du gène MHP1 non Sc spécifique à une levure de bière de fermentation basse, des boissons alcoolisées produites à l'aide de cette levure ainsi qu'un procédé de production desdites boissons.
