The present invention refers to a pressure adjustment device applicable in particular, but not exclusively, to stretch blow moulding machines. In particular, the present invention regards a pressure adjustment device (1), in particular for stretch blow moulding machines of containers made of plastic material, comprising an opening ( 12 ) for dispensing a blowing fluid, said device comprising a hollow body (4) having a first inlet opening (15) for a high pressure fluid and a second inlet opening (17) for a piloting fluid, within said hollow body (4) being slidably arranged a shutter (20), said shutter (20) being held in closing position by elastic means (23), wherein the adjustable opening of said shutter (20) occurs, in contrast with said elastic means (23), by introducing - through said second inlet opening (17) - said piloting fluid into a piloting chamber (22) arranged between said hollow body (4) and said shutter (20), and wherein said piloting fluid has a controlled and adjustable pressure.
