A method for producing an .alpha.-L-aspartyl-L-phenylalanine-.beta.-ester (also named .alpha.-L-(.beta.-o-substituted aspartyl)-L-phenylalanine), which is an intermediate of an .alpha.-L-aspartyl-L-phenylalanine-.alpha.-methyl ester (also named .alpha.-L-aspartyl-L-phenylalanine methyl ester; product name: aspartame), easily, at high yield and inexpensively without going through a complex synthesis method is provided. Further, an easy, inexpensive and high-yield production method for an .alpha.-L-aspartyl-L-phenylalanine- .alpha.-methyl ester is provided. .alpha.-L-aspartyl-L-phenylalanine-.alpha.- methyl ester is produced from a L-aspartic acid-.alpha.,.beta.-diester and L- phenylalanine using an enzyme or enzyme-containing substance that has an ability to catalyze a reaction in which L-phenylalanine performs no nucleophilic attack on a .beta.-ester site of L-aspartic acid-.alpha.,.beta.- diester but performs a nucleophilic attack on an .alpha.-ester site thereof.

L'invention concerne un procédé de production d'un .alpha.-L-aspartyl-L-phénylalanine-.beta.-ester (également connu sous le nom de .alpha.-L-(.beta.-o-substitué aspartyl)-L-phénylalanine), lequel est un produit intermédiaire de .alpha.-L-aspartyl-L-phénylalanine-.alpha.-méthyl ester (également connu sous le nom de .alpha.-L-aspartyl-L-phénylalanine méthyl ester; nom du produit: aspartame), facilement et économiquement et avec un rendement élevé sans recourir à un procédé de synthèse complexe. L'invention concerne en outre un procédé de production facile, économique et à rendement élevé, d'un .alpha.-L-aspartyl-L-phénylalanine-.alpha.-méthyl ester. L'.alpha.-L-aspartyl-L-phénylalanine-.alpha.-méthyl ester est produit à partir d'un L-acide aspartique-.alpha.,.beta.-diester et de L-phénylalanine au moyen d'une enzyme ou d'une substance contenant une enzyme qui est apte à catalyser une réaction dans laquelle la L-phénylalanine n'effectue aucune attaque nucléophile sur un site .beta.-ester du L-acide aspartique-.alpha.,.beta.-diester, mais effectue une attaque nucléophile sur un site .alpha.-ester dudit acide.
