The invention relates to a device (10) for separating surface layers in products of the food industry, comprising a transport element (11) for transporting the products from an inlet region to an outlet region, the transport element (11) being guided about a deflection element (12) that is confi-gured substantially cylindrically in at least the outlet region, a pressing means (13) for pressing the pro-ducts onto the transport element (11), and a separa-ting element (14) for separating the surface layer from the product, the separating element (14) being disposed in the outlet region of the transport ele-ment (11) while forming a separating gap between the separating element (14) and the transport ele-ment (11), characterized in that the deflection ele-ment (12) disposed in the outlet region is configured to carry out a rotational movement and can be con-trolled accordingly, and comprises a (cross-sectio-nal) shape alternating in the axial direction and/or the circumferential direction in order to form a pro-cess gap. The invention further relates to a corre-sponding method.
L'invention concerne un dispositif (10) permettant d'ôter la couche superficielle de produits destinés à l'alimentation, comprenant un élément transporteur (11) pour transporter les produits d'une zone d'admission à une zone d'évacuation, l'élément transporteur (11) étant, au moins dans la zone d'évacuation, guidé autour d'un élément de renvoi (12) sensiblement cylindrique, un élément presseur (13) pour presser les produits contre l'élément transporteur (11), et un élément séparateur (14) pour ôter la couche superficielle du produit, l'élément séparateur (14) étant disposé dans la zone d'évacuation de l'élément transporteur (11) et formant une fente de séparation entre l'élément séparateur (14) et l'élément transporteur (11). Selon l'invention, l'élément de renvoi (12) disposé dans la zone d'évacuation est conçu pour effectuer un mouvement de rotation et est commandé en conséquence, et il présente une forme à sections transversales différentes en direction axiale et/ou en direction circonférentielle, pour former une fente de traitement. L'invention concerne en outre un procédé correspondant.
