A method for preparation of smoke extract from wood tar for flavouring and colouring of food products is disclosed. The smoke extract is with the present method produced by means of supercritical extraction of fractions of the wood tar. The extractions solvent, such as carbon dioxide, has very good properties of entraining and resolving the required fractions of the wood tar, and it is relatively simple to separate the resolved components in the retrieving process, as the different components have different solubility at different supercritical and subcritical conditions. Thus, a smoke extract containing less than 10 ppb (parts per billion) of benzo (a) pyrene and less than 20 ppb of benzo (a) athracene may be obtained. In one embodiment, the wood tar is subject to a separation process prior to the supercritical extraction to remove a substantial part of the unwanted components.

L'invention concerne un procédé pour préparer de l'extrait de fumée à partir de goudron de bois, pour aromatiser et colorer des produits alimentaires. Selon l'invention, l'extrait de fumée est obtenu par extraction supercritique de fractions de goudron de bois. Le solvant d'extraction, tel que le dioxyde de carbone, a d'excellentes propriétés pour entraîner et décomposer les fractions de goudron de bois nécessaires, et les éléments décomposés lors de l'extraction sont relativement simples à séparer, les différents éléments présentant une solubilité différente dans différentes conditions supercritiques et sous-critiques. On peut ainsi obtenir un extrait de fumée contenant moins de 10 ppb (parties par milliard) de benzo(a)pyrène et moins de 20 ppb de benzo(a)anthracène. Dans un mode de réalisation, l'extrait de fumée est soumis à séparation avant l'extraction supercritique pour éliminer une partie substantielle des composants indésirables.
