The invention relates to a method for producing an avocado unsoponifiable rich in furan lipids. The inventive method successively consists in (1) a controlled dewatering of fresh avocados or pre-transformed avocados, (2) extracting dehydrated fruits oil, (3) heat treating the thus extracted oil and in concentrating it in the unsoponifiable fraction thereof, or alternatively, said two operations can be carried out in said order or in reverse. The stage (4) consists in saponificating and extracting the unsoponifiable.
La présente invention concerne un procédé d'obtention d'un insaponifiable d'avocat riche en lipides furaniques qui comprend les étapes successives (1) de déshydratation contrôlée des avocats frais ou ayant subi des transformations préalables, (2) d'extraction de l'huile de fruits déshydratés, (3) d'un traitement thermique de l'huile extraite et d'une étape de concentration de l'huile en sa fraction insaponifiable ou alternativement, ces deux opérations pouvant être effectuées successivement dans cet ordre ou dans l'ordre inverse et enfin (4) une étape de saponification et d'extraction de l'insaponifiable.
