The invention comprises method of and apparatus for drying pasty materials. The pasty materials are subjected to a first drying stage (1) at a first temperature, and then subjecting the partially dried pasty material are subjected to a second drying stage (10) at a second temperature. The second temperature is lower than the first temperature. The invention also envisages a method of drying and sterilising a pasty material comprising the steps of subjecting the pasty material to a first heat sterilisation process (1) and then a second heat drying process (10). The invention also envisages a method of drying pasty materials wherein the pasty material is broken into pieces (55) and partially dried (56) to form a crust at least partially over each piece prior to further processing of the pasty material.
L'invention concerne un procédé et un appareil destinés à la déshydratation de matières pâteuses. Selon l'invention, les matières pâteuses sont soumises à une première étape de déshydratation (1) à une première température, et les matières pâteuses partiellement déshydratées sont ensuite soumises à une seconde étape de déshydratation (10) à une seconde température, la seconde température étant inférieure à la première température. L'invention porte également sur un procédé de déshydratation et de stérilisation de matières pâteuses qui comprend une étape où l'on soumet la matière pâteuse à un premier processus de stérilisation thermique (1) et une étape où l'on soumet la matière pâteuse à un second processus de stérilisation thermique (10). L'invention se rapporte aussi à un procédé de déshydratation de matières pâteuses selon lequel on divise la matière pâteuse en morceaux (55) que l'on déshydrate partiellement (56) afin de former au moins partiellement une croûte au-dessus de chaque morceau avant de poursuivre le traitement de la matière pâteuse.
