A plant and method of treating low-fat milk, such as skim milk, so as to obtain a milk with a low content of spores and bacteria, wherein the milk is subjected to a first microfiltration causing a separation into a first retentate and first permeate, the first permeate being subjected to an additional microfiltration. This double microfiltration ensures that the acceptable limites for bacterial counts in milk products are not exceeded in case of a membrane breakdown.

L'invention concerne une installation et un procédé servant à traiter du lait à basse teneur en matière grasse, tel que le lait écrémé, de manière à obtenir du lait à basse teneur en spores et en bactéries. Selon l'invention, le lait est soumis à une première microfiltration causant une séparation en un premier retentat et un premier ultrafiltrat, le premier ultrafiltrat étant soumis à une microfiltration supplémentaire. Cette double microfiltration assure que les limites acceptables pour la numération bactérienne dans les produits laitiers ne soit pas dépassée en cas de rupture de membrane.
