The present invention relates to a brewery yeast having controlled sulfite- producing capability, a process for producing alcoholic beverages with controlled sulfite amount. More particularly, the present invention relates to a yeast whose sulfite-producing capability that contribute to the product flavor is controlled by controlling the expression level of MET16 gene encoding brewery yeast phosphoadenylyl sulfate reductase Met16p, particularly non-ScMET16 gene specific to lager brewing yeast, and to a method for producing alcoholic beverages with said yeast.
La présente invention concerne une levure de brasserie présentant une capacité contrôlée de production de sulfite, et un procédé de production de boissons alcoolisées avec une quantité contrôlée de sulfite. L'invention concerne plus particulièrement une levure dont la capacité de production de sulfite, qui contribue à la saveur du produit, est contrôlée par régulation du niveau d'expression du gène MET16 codant la phospho-adénylyl-sulfate réductase de la levure de brasserie, Met16p, en particulier le gène non ScMET16 propre à la levure de brasserie basse. Elle concerne également un procédé de production de boissons alcoolisées avec ladite levure.
