A process for efficiently producing a monatin useful as a sweetener, especially an optically active monatin, comprising carrying out a reaction of isomerization at 2-position of a monatin whose 2-position and 4-position configurations are different from each other in the presence of an aldehyde in a mixed solvent of water and organic solvent at a pH of 4 to 11 and simultaneously performing crystallization of a monatin whose 2-position and 4- position configurations are identical with each other or a salt thereof.
