The invention relates to a method for identifying a useful protein of brewery yeast. More specifically, the invention relates to (a) cultivating yeast under a predetermined cultivation condition; (b) extracting a protein sample from the cultivation product of the yeast; (c) separating the protein sample by a protein separation means, selecting a target peak or spot, and recovering the target protein or a fragment thereof contained in the peak or spot; (d) determining the amino acid sequence of the target protein; (e) comparing the amino acid sequence determined in step (d) with the amino acid sequence determined in advance based on all or a part of genome sequence information of bottom fermenting yeast; (f) identifying the target protein and the gene encoding the target protein based on the results of comparison; and (g) analyzing functions of the identified gene to identify characters given to the yeast by the gene.
L'invention concerne un procédé visant à identifier une protéine utile d'une levure de bière. Le procédé consiste plus particulièrement en ce qui suit : (a) cultiver la levure dans des conditions de culture prédéterminées; (b) extraire un échantillon de protéine d'un produit de culture de levure; (c) séparer l'échantillon de protéine par un moyen de séparation de protéine, sélectionner une crête ou un point cible et récupérer la protéine cible ou son fragment contenu dans la crête ou la cible; (d) déterminer la séquence d'acides aminés de la protéine cible; (e) comparer la séquence d'acides aminés déterminée au stade (d) à la séquence d'acide aminés déterminée à l'avance sur la base de la totalité ou d'une partie des informations sur la séquence génomique d'une levure à fermentation basse; (f) identifier la protéine cible et le gène codant pour la protéine cible sur la base des résultats de la comparaison et; (g) analyser les fonctions du gène identifié pour identifier les caractères conférés à la levure par le gène.
