Methods and apparatus for the concentration of microorganisms, particularly bacteria, from sample material, particularly from complex sample material and more particularly from foodstuff derived materials, comprise use of desalting means to reduce its conductivity to below 1000 µS/cm2 followed by dielectrophoresis. Methods of assaying microorganisms, and producing approved batches of foodstuffs are also disclosed.
