The use of an ingredient as a replacement for some or all of the acid in beverages is disclosed. Tamarind extract is used at low levels as a replacement for the phosphoric, citric or other acids conventionally found in carbonated soft drinks, flavored waters such as flavored waters, and iced teas. The resulting beverage has a higher pH, thus increasing the shelf life of beverages containing aspartame, as well as a flavor profile equivalent or better than convenional beverages sweetened with aspartame.

L'invention concerne l'utilisation d'un ingrédient en remplacement de certains ou de tous les acides contenus dans des boissons. On utilise de l'extrait de tamarin à faibles doses en remplacement de l'acide phosphorique, de l'acide citrique ou d'autres acides courants dans des boissons non alcoolisées gazéifiées et dans des eaux aromatisées comme le thé froid. La boisson obtenue comporte un pH plus élevé, ce qui augmente la durée de conservation de boissons contenant de l'aspartame, et son profil de flaveur est équivalent à celui des boissons classiques sucrées à l'aspartame, voire meilleur.
