It is intended to search for and produce cathepsin L which retains a high activity under neutral to alkaline conditions in a low temperature region. A novel cathepsin L sustaining its activity in a low temperature region can be successfully found out in the hepatopancreas of pink shrimp (Pandalus eous) growing in Japan. Further, the gene sequence of this novel cathepsin L is determined, which makes it possible to produce it by a gene recombination method.

La présente invention vise à rechercher et à produire de la cathépsine L qui conserve une activité importante dans des conditions neutres à alcalines dans une région de températures faibles. Il est possible d'extraire avec succès une nouvelle cathépsine L conservant son activité dans une région de faibles températures, à partir de l'hépatopancréas de la crevette rose (<i>Pandalus eous</i>) que l'on trouve au Japon. En outre, il est possible de déterminer la séquence génétique de cette nouvelle cathépsine L, ce qui rend possible sa production selon un procédé de recombinaison génétique.
