The invention concerns a process and device for opening shellfish such as oysters whose shell is held by a muscle. According to the invention, the process consists of placing the shellfish (5) on a graphic (6) or mechanical (20) device to enable the shellfish (5) to be positioned correctly in relation to a drilling tool (3) to ensure that its shell is pierced at or near the muscle, carrying out the operation of piercing the shell at or near the muscle, cutting apart the muscle, using appropriate means inserted through the hole that was just made, and of removing the shell by a simple pulling movement.

L'invention concerne un procédé et un dispositif pour ouvrir les coquillages, genre huîtres, dont le couvercle est retenu par un muscle. Conformément à l'invention, le procédé consiste: à placer le coquillage (5) sur un dispositif graphique (6) ou mécanique (20) permettant un positionnement correct dudit coquillage (5) par rapport à un outil de perçage (3), pour assurer le percement de son couvercle sur le muscle ou dans la zone proche du muscle; à effectuer l'opération de percement dudit couvercle sur le muscle ou dans la zone proche de ce muscle; à sectionner le muscle par des moyens appropriés introduits par l'orifice qui vient d'être réalisé; puis à enlever le couvercle de l'huître par simple traction.
