The present invention concerns a taste enhancing savoury base comprising: - between 8 to 80 % of naturally derived compounds taken in the group consisting of glutamate, IMP and GMP, - naturally food derived compounds such as organic acids and their salts, amino acids, peptides and aroma compounds, wherein said base is obtained through a prokaryotic fermentation with a bacteria taken from the group consisting of Corynebacterium glutamicum, Corynebacterium ammoniagenes, Corynebacterium casei, Corynebacterium efficiens, Brevibacterium lactof ermentum and Bacillus subtilis and wherein said base is not purified.
La présente invention porte sur une base de saveur de renforcement du goût, laquelle base comprend : - entre 8 et 80 % de composés dérivés de façon naturelle pris dans le groupe comprenant le glutamate, l'IMP et le GMP, - des composés dérivés d'aliments de façon naturelle tels que des acides organiques et leurs sels, des acides aminés, des peptides et des composés d'arome, ladite base étant obtenue à l'aide d'une fermentation procaryotique au moyen d'une bactérie prise parmi le groupe comprenant Corynebacterium glutamicum, Corynebacterium ammoniagenes, Corynebacterium casei, Corynebacterium efficiens, Brevibacterium lactofermentum et Bacillus subtilis, et ladite base n'étant pas purifiée.
