The invention concerns a method for transforming food sugars, which acts in two ways: directly and indirectly. Said method is characterised in that the main direct action consists in inhibiting glycolysis by transforming the cariogenic polyoses into non-cariogenic polyols (for example, sorbitol); the indirect action consists in the use of products derived from the polyose degradation as substrates by the inventive enzymatic system so as to reinforce prevention of plaque formation, through five mechanisms: stimulating saliva flux with the polyols; reinforcing the saliva antibacterial power by activating the physiological lactoperoxidase/hypothiocyanate system with hydrogen peroxide; decreasing the number and pathogenicity of the bacterial environment stabilising .delta.-lactones, which are not bacterial substrates for plaque formation; remineralizing the enamel by stabilising the calcium phosphate solution with sorbitol. The invention is applicable to bucco-dental hygiene.

Procédé de transformation des sucres alimentaires. Procédé agissant de deux manière: directe et indirecte caractérisé par le fait que l'action principale directe consiste à inhiber la glycolyse en transformant les polyoses cariogènes en polyols non cariogènes (ex: sorbitol); l'action indirecte consiste par l'utilisation des produits issus de la dégradation des polyoses comme substrats par le système enzymatique décrit dans l'invention afin de renforcer la prévention de la formation de la plaque dentaire, par 5 mécanismes: stimulation du flux salivaire par les polyols; renforcement du pouvoir anti-bactérien de la salive par activation du système physiologique LPO/Hypothiocyanate par le peroxyde d'hydrogène; diminution du nombre et de la pathogénicité du milieu bactérien - stabilité des (lactones, qui ne sont pas des substrats bactériens pour la formation de la plaque dentaire; reminéralisation de l'émail par la stabilisation de la solution de phosphate de calcium par le sorbitol. L'invention s'applique à l'hygiène bucco-dentaire.
