A method to control the distribution of the starch sugar's molecular weight by controlling of Ultra-low DE value during the reaction was invented. The method comprising blending starch with water to get starch slurry and then mixing it with the 0.01%- 0.03% of CaCl2 based on dried starch. The next step involves adjusting the pH of the starch slurry. A further step involves adding 0.03% - 0.08% of heat- resisting .alpha.- amylases based on dried starch to the starch slurry described above. A further step involves controlling the production under optimal reaction conditions.

Méthode permettant de réguler la distribution de la masse moléculaire d'un sucre d'amidon en réglant la valeur de DE ultra faible pendant que la réaction est inventée. La méthode consiste à mélanger l'amidon avec de l'eau afin d'obtenir une bouillie, puis à mélanger celle-ci avec 0,01 % à 0,03 % de CaCl2 en poids d'amidon sec. L'étape suivante consiste à ajuster le pH de la bouillie d'amidon. Une autre étape est d'ajouter 0,03 % à 0,08 % d'alpha-amylases thermorésistantes en poids d'amidon sec à la bouillie décrite précédemment. Une autre étape consiste à maintenait des conditions de réaction optimales pendant la production.
