The invention relates to the use of flavonoids as flavouring substances and/or as salt substitutes. A mixture of several flavonoids such as from onion, apple and tea are mixed to form a composition. The flavonoid preparation may be used as a general flavouring substance and as a salt substitute in home cooking as well as in food industry. Increased flavonoid intake reduces the risk of coronary diseases.

L'invention concerne l'utilisation de flavonoïdes, soit en tant que substances aromatiques, soit en tant que substituts de sel. On mélange plusieurs flavonoïdes provenant, par exemple, de l'oignon, de la pomme ou du thé, afin d'obtenir une composition. On peut utiliser cette préparation de flavonoïdes en tant que substance aromatique et en tant que substitut du sel en cuisine ménagère, ainsi que dans l'industrie alimentaire.
