The present invention relates to nucleic acid molecules coding for a protein with beta-amylase activity from potato and to a method for the production of transgenic plant cells and plants synthesizing a modified starch. The invention also relates to vectors and host cells containing the nucleic acid molecules according to the invention, the plant cells and plants produced using the method according to the invention and the starch synthesized by the plant cells and plants according to the invention. The invention also relates to a method of production of said starch.

L'invention concerne une molécule d'acide nucléique codant pour une protéine ayant l'activité d'une .beta.-amylase de la pomme de terre, ainsi qu'un procédé d'obtention de cellules végétales et de plantes transgéniques synthétisant un amidon modifié. En outre, l'invention concerne des vecteurs et des cellules hôtes renfermant la molécule d'acide nucléique conforme à l'invention, les cellules végétales et les plantes produites selon le procédé de l'invention, l'amidon synthétisé par les cellules végétales et les plantes conformes à l'invention, ainsi qu'un procédé d'obtention de cet amidon.
