Steviol glycoside isomers are provided having the formula (II): wherein R1 may be hydrogen, 1-.beta.-D-glucopyranosyl, or 2-(1-.beta.-D-glucopyranosyl)-1-.beta.-D- glucopyranosyl, and R2 may be hydrogen, 1-.beta.-D-glucopyranosyl, 2-(1-.beta.-D-glucopyranosyl)- 1-.beta.-D-glucopyranosyl, 2,3 -bis(1-.beta.-D-glucopyranosyl)-1-.beta.-D- glucopyranosyl, 2-(1-.alpha.-L- rhamnopyranosyl)-1-.beta.-D-glucopyra-nosyl, 2-(1-.alpha.-L-rhamnopyranosyl)-3 -(1-.beta.-D- glucopyranosyl)-1-.beta.-D- glucopyranosyl, or 2-(1-.beta.-D-xylopyranosyl)-3 -(1-.beta.-D- glucopyranosyl)-1-.beta.-D-glucopyranosyl. Methods for making steviol glycoside isomers are also disclosed. These compounds may be present in food and beverage products as non- nutritive sweeteners.
L'invention concerne des isomères de stéviol glycosides répondant à la formule (II) : dans laquelle formule R1 peut être hydrogène, 1-ß-D-glucopyranosyle ou 2-(1-ß-D-glucopyranosyl)-1-ß-D-glucopyranosyle et R2 peut être hydrogène, 1-ß-D-glucopyranosyle, 2-(1-ß-D-glucopyranosyl)-1-ß-D-glucopyranosyle, 2,3-bis(1-ß-D-glucopyranosyl)-1-ß-D-glucopyranosyle, 2-(1-a-L-rhamnopyranosyl)-1-ß-D-glucopyranosyle, 2-(1-a-L-rhamnopyranosyl)-3-(1-ß-D-glucopyranosyl)-1-ß-D-glucopyranosyle ou 2-(1-ß-D-xylopyranosyl)-3-(1-ß-D-glucopyranosyl)-1-ß-D-glucopyranosyle. L'invention concerne également des procédés de fabrication d'isomères de stéviol glycosides. Ces composés peuvent être présents dans des produits alimentaires et boissons en tant qu'édulcorants non nutritifs.
