A process for producing frozen potato products having reduced trans-fat levels comprising the steps of: providing a stable frying oil with an 18:3 ratio of < 2 wt% and a trans-fat level of < 3 wt%; par frying potatoes in the blend to produce potato products; and freezing the potato products to produce frozen potato products having reduced trans-fat levels, wherein > 50% of the oil remaining in and on the frozen potato products freezes at temperatures >= 10° F.

La présente invention concerne un procédé de production de produits surgelés à base de pommes de terre de teneur réduite en graisses trans, ledit procédé comprenant les étapes consistant à : se munir d'une huile de friture stable de rapport 18 : 3 inférieur à 2 % en poids et de teneur en graisses trans inférieure à 3 % en poids; faire saisir des pommes de terre dans l'huile pour obtenir des produits à base de pommes de terre; et congéler les produits à base de pommes de terre pour obtenir des produits surgelés à base de pommes de terre de teneur réduite en graisses trans, 50 % ou plus de l'huile qui reste à l'intérieur et à la surface des produits surgelés à base de pommes de terre gelant à des températures >= 10 °F.
