There is provided crustacean shell food of shrimps, crabs, etc. in which Crustacea such as shrimps, crabs etc. is covered with straw material, dried by a midwinter drying method in winter season or, independent of seasons, naturally or artificially dried in a cooled atmosphere similar to the midwinter drying method and separated flesh and shells therefrom, followed by further drying the shells to utilize thereof as food. The present shell food has a good flavor with characteristic texture and is useful for health and quite effective to improve various diseases.
