A preservation and packaging method, particularly for food products in a sealed and transportable container which can be kept at room temperature or at a controlled temperature is described, wherein all the vitamins, trace elements, mineral salts and enzymes contained in the food products prior to the heat treatment thereof are preserved. The inner volume of container (10) is partially evacuated before it is sealed, such that the partial vacuum lowers the boiling and/or melting point of the products during the heating phase of the heat treatment. A semi-rigid or flexible plastic material is used for the container, the volume of air remaining in the sealed volume allowing for the deformation of the plastic container so as to balance outer and inner pressures during the temperature rise of the heat treatment.

La présente invention concerne un procédé de conservation et de conditionnement, notamment de produits alimentaires logés dans un contenant transportable et hermétique, susceptible d'être conservé à température ambiante ou à température dirigée, et en préservant la totalité des vitamines, des oligo-éléments, des sels minéraux, et des enzymes constituant les produits avant le traitement thermique. L'intérieur du contenant (10) est mis sous vide partiel avant scellement, la valeur de la dépression servant à abaisser le point d'ébullition et/ou de fusion des produits pendant la phase de chauffage du traitement thermique. Une matière plastique souple ou semi-rigide est utilisée pour constituer le contenant, le volume d'air restant à l'intérieur du volume étanche autorisant une déformation du contenant en plastique pour l'équilibrage des pressions internes et externes au cours de la montée en température du traitement thermique.
