La présente invention est relative à un procédé d'élaboration de chocolats et/ou de compositions chocolatées/cacaotées, assisté par ordinateur à partir d'une banque d'ingrédients Pj, à l'aide d'outils tels que une échelle de valeur E permettant d'attribuer une valeur numérique vij pour le descripteur de goût Gi de chaque ingrédient Pj et une fonction f désignant l'ensemble des règles permettant de calculer les valeurs vic caractérisant le goût d'un assemblage C de chocolats. L'invention propose également un dispositif permettant la mise en AEuvre du procédé selon l'invention.
