A starch thinning and etherif ication process is provided comprising the steps of (a) mixing a starch substrate with a thinning agent, an alkalizing agent and an etherif ication agent; (b) drying the mixture of step (a); and (c) allowing the dried mixture to react with the etherif ication agent, wherein: the thinning agent consists of one or more hypochlorites; step (a) is carried out at an alkaline pH and does not involve any artificial heating; and step (b) is carried out before the mixture of step (a) reaches the starch substrate's gelatinisation temperature.

L'invention un procédé de fluification et d'éthérification d'amidon consistant (a) à mélanger un substrat d'amidon avec un agent fluidifiant, un agent alcalifiant et un agent d'éthérification, (b) à sécher le mélange de l'étape (a), et (c) à permettre au mélange séché de réagir avec l'agent d'éthérification, l'agent fluidifiant étant constitué d'un ou plusieurs hypochlorites, l'étape (a) étant réalisée à un pH alcalin et ne requérant aucun chauffage artificiel, et l'étape (b) étant réalisée avant que le mélange de l'étape (b) atteigne la température de gélatinisation du substrat d'amidon.
