Process to obtain a food composition based on chufas and bananas . The chufas are crushed to obtain liquid chufa orgeat at a low temperature, from which the starch is separated and sodium caseinate, sugar and stabilizers added, as well as an emulsifier previously melted in hot water. On the other hand, peeled bananas are crushed with ascorbic and citric acids, filtering the resulting liquid. The chufa orgeat is mixed with the banana liquid with sugar and flavor for its packing under aseptic conditions.

Préparation d'une composition alimentaire à base d'amandes de terre et de bananes. D'abord, on écrase les amandes de terre pour en obtenir un orgeat à basse température; après avoir extrait l'amidon de l'orgeat, on ajoute à ce dernier du caséinate de sodium, du sucre et des stabilisants, de même qu'un émulsifiant d'abord dissous dans l'eau chaude. Ensuite, on écrase les bananes pelées avec de l'acide ascorbique et de l'acide citrique, puis on filtre le liquide résultant. On mélange enfin l'orgeat d'amandes de terre avec le liquide de banane, ainsi qu'avec du sucre et de l'arôme pour son conditionnement dans des conditions d'asepsie.
