PEANUT BUTTER WITH IMPROVED OXIDATIVE STABILITY Abstract of the Disclosure The invention is a peanut butter comprising a dispersion of finely divided peanut particles in a continuous oil phase. The oil phase comprises peanut oil derived from peanuts in which the naturally occurring oil has a fatty acid composition such that the oleic:linoleic acid ratio is between about 6:1 and about 40:1. The peanut butter has improved resistance to oxidation and staling.
