A method of preparing a mixture of galactooligosaccharides having the formula: Gal-(Gal)n-Glc wherein Gal represents a galactose residue, Glc represents a glucose residue, and n represents an integer from 1 and 4, and monosaccharides. The method includes the steps of treating a lactose solution with microorganisms containing .beta.-galactosidase or isolated .beta.-galactosidase wherein said .beta.-galactosidase has galactosyl transfer reaction activity. A portion of the glucose prepared by the .beta.-galactosidase treatment is converted into fructose by the addition of glucose isomerase to the lactose solution being treated, or by adding glucose isomerase after completion of the treatment. A monosaccharides sweetener then can be prepared by separating the monosaccharides from the resulting mixture.

Divulgation d'une méthode de préparation d'un mélange de galacto-oligosaccharides ayant la formule : Gal-(Gal)n-Glc, dans laquelle Gal représente un résidu de galactose, Glc représente un résidu de glucose, et n représente un nombre entier entre 1 et 4, et de monosaccharides. La méthode comporte les étapes suivantes : traiter une solution de lactose avec des microorganismes contenant de la .bêta.-galactosidase ou avec de la .bêta.-galactosidase isolée, cette dernière ayant une activité de réaction de transfert du galactosyle. Une partie du glucose préparé par le traitement à la .bêta.-galactosidase est convertie en fructose par l'addition de glucose isomérase à la solution de lactose traitée, ou par addition de glucose isomérase une fois le traitement terminé. Un édulcorant à base de monosaccharides peut alors être préparé par séparation des monosaccharides du mélange résultant.
