This fiber can be improve the glycemic index; increase calcium levels; lower blood cholesterol, triglycerides and low density lipoproteins levels in normal, diabetic or hypercholesterolemic humans or animals.. This fiber can be used to improve the texture of food, add bulk to food or improve the mouthfeel of certain foods. This fibrous vegetable matter can be incorporated into drinks, processed foods, meats, and other foods. This invention also includes an improved process for making the fiber and methods to increase the solubility of the fiber.
