Provided are methods of removing bisulfite material from a composition that contains a bisulfite material and an enzyme. The method includes contacting the composition with a compound containing at least one aldehyde functional group to form an aldehyde-bisulfite complex, whereby the aldehyde-bisulfite complex may be separated from the composition.

L'invention concerne des procédés destinés à enlever une matière bisulfitique d'une composition contenant une matière bisulfitique et une enzyme. Le procédé consiste à mettre cette composition en contact avec un composé contenant au moins un groupe fonctionnel aldéhyde en vue de la formation d'un complexe aldéhyde-bisulfite, ce complexe aldéhyde-bisulfite pouvant être séparé de la composition.
