A process for preparing a beanless flavor soymilk or okara or a combination thereof, which compares the stages of containing soybeans with deaerated water under an atmosphere of carbon dioxide for a time and a temperature effective to allow said soybeans to soak and swell; washing said soaked and swollen soybeans with water to remove oligosaccharides and ripening enzymes; grinding said washed soybeans under an at atmosphere of carbon dioxide by bubbling in carbon dioxide in a sublimated state to form a slurry; and filtering the slurry to produce raw okara and soymilk.

L'invention concerne un procédé de fabrication de lait de soja ou d'okara sans fèves ou d'une combinaison de ceux-ci, consistant à amener les fèves de soja en contact avec de l'eau dégazée dans une atmosphère de dioxyde de carbone, sur une durée suffisante et à une température telle que les fèves de soja soient trempées et gonflent ; à laver les fèves de soja trempées et gonflées avec de l'eau de manière à éliminer les oligosaccharides et les enzymes d'affinage ; à broyer lesdites fèves de soja lavées dans une atmosphère de dioxyde de carbone par barbotage dans du dioxyde de carbone à l'état sublimé de manière à former une suspension ; et à filtrer la suspension de manière à produire de l'okara et du lait de soja crus.
